I teach you how to make this great spanish classic Pisto. THis is vegetables in tomatoe sauce, perfect for those cold winter days. Thank you to my O and M instructor Susana for teaching me how to make this great dish.

1 onion thinly sliced
4 zucchinis thinly sliced
4 small or one large red pepper thinly sliced
4 small or one large green pepper thinly sliced
1 can tomato sauce
1 can crushed tomatoes
Cut all the vegetables in to thin slices. Place a little bit of oil in a skillet and fry the onion until transparennt about 10 minutes. Add the rest of the vegetables and cook until tender. Add the crushed tomatoes and simmer for a while. THen add the tomato sauce and simmer for 30 minutes more. I hope you enjoy this classic from our Spanish kitchen!
