Mom’s Biscotti

In this Christmas episode of the Gwennacast, I make my beloved Mom’s biscotti. Biscotti is a traditional Italian dessert served as a hard cookie. These are softer however, less baking time. I hope you enjoy, Merry Christmas, Feliz Navidad, Happy Quanza, Happy Haneuka!!

Nancy’s Biscotti

3 eggs beaten
1 c. sugar
1 cup oil
3-1/2 cups flour
2 teaspoons baking soda
1 teaspoon vanila
1 cup chopped nuts
1/2 tsp cinnamon
Chocolate chips can be used, but no cinnamon. if using chocoalte chips put in another half a teaspoon of vanilla.
Directions:
Beat eggs then add other ingredients in order. Stir on one ingredient at a time. Mix well, form dough in to loaves. Bake at 350 for 40 minutes. Let cool and cut in to half inch slices. Bake for 10 minutes more. THe longer you leave it in the oven the harder they get.
